The suitability of apricot for dried fruit production by the combined technology

The apricot is considered as one of the most delicious temperate fruit, a highly appreciated stone fruit and valuable raw material for processing. Republic Serbia leading producers in Southeast Europe, but assortment limited by small number cultivars harvested, mostly ripening season ?Magyar kajszi?. In order to introduce suitable production, having high yield quality consumption various forms processing, introduced domestic have been intensively studied. Serbia, apricots are marketed fresh processed jams spirits, demand high-quality dried fruits increasing. To preserve nutritional sensory apricots, choosing best drying technique significant, preferred reduction moisture through convective drying. aim paper was compare potential kajszi?, ?Novosadska rodna?, ?NS-4? ?NS-6? production two-phase technology - combined osmotic drying, well profitability on family farms.
